Recently Consumed – The Comfort Food Edition

It's been a pretty busy couple of months……luckily, I have folks like Cathy and Ed from Yuma to help me out. Without them, I truly doubt that this blog would still exist. Life has its rhythm, an ebb and flow, and this was just a long "high tide" I guess. Things are starting to settle a bit now, still kind of crazy, but I'm dealing with one or two crises per day, rather than four or five.

One thing I really notice this time around was how my eating just sort of retreated into its own simple comfort food mode……but I guess that's what comfort food is……

Here's a little collection of what we ate during the period when I was too busy or tired to cook……

So here's the requisite Spam, Eggs, and Rice bowl……

If I took photos of all of these dinners…and lunches, it would probably be a collection of similar egg and rice bowls.

Eggs, rice, and salty protein…..I guess that does it for me……

Even when I had time at home, it was stuff I could just prep and forget about until ready…..

The Missus got into the act too…..She loves steamed egg. This one has cold smoked scallops with sesame oil.

Which leads me to the question…..when things are going crazy; what's your "comfort meal"!

  1. hey kirk! i know this is absolutely wrong and maybe doesn’t even qualify as food, but when i’m stressed out and i need something to munch i can eat my way through a ten pound bag of ice. i actually broke a tooth that way, so now it’s more like a ten pound bag of partially melted ice.
    other than that, soup maybe. rice maybe. soup with rice maybe.

  2. Aw, sad-face egg!
    My comfort food (which I am eating right now) is rice noodle soup, with nappa cabbage that’s been cooked until it’s super soft. Guaranteed to make me feel better!

  3. My all-time comfort food is leftover rice cooked with scrambled eggs that have soy and sugar added. My mom used to make it for me when I was sick. Now I make it for myself when I’m under the weather.

  4. I like the fried egg and rice combo too for comfort food. Fast and filling.
    I also like baked lemon pepper salmon with rice and sauteed bok choy and scrambled eggs with fish sauce on the side. Always that combo together for some reason.
    And chicken noodle soup with alphabet noodles.

  5. Hi Santos – If you eat it (or heck maybe even drink it) and it helps you, I guess it’s comfort food. A ten pound bag of ice….man, that’s a lot of trips to the bathroom! ;o) Also, doesn’t your teeth hurt after a while?

  6. What was the penultimate protein?
    I had to look up chicken tinola. And it happens to be one of my favorites too (especially for a cold). I just didn’t know what it was called.
    Pork/seafood chow mein!

  7. The soy sauce egg could be used as a Rorschach test for your readers ๐Ÿ™‚
    Do you have an easy recipe for the egg custard? Mine always comes out wrong – i think i steam it long or don’t have the ratios right or something.

  8. It sure could Faye! This version the Missus makes, because what I make is Japanese Chawan Mushi and She doesn’t like that.
    Depends on how I feel Billy! I guess I must feel one way or the other as I’ve never done “one each”!

  10. I’m also an egg person when it comes to comfort food… Japanese curry with a fried egg. Braised pork belly with marinated eggs. Steamed ground pork patty with an egg on top. Instant noodles with an egg… oh wait, that was my college self ๐Ÿ˜›

  11. Every other Sunday morning, my son asks for spam, garlic fried rice with soft over-easy eggs with crunchy edges. My comfort food has become his as well!

  12. When the winter months start to close in, I start to salt some duck eggs; about four weeks normally does the trick.
    Sometimes, a single boiled salted duck egg is all I need to devour two quick (Chinese) bowls of rice.

  13. it’s just over a gallon of water (if unmelted) and i can taste my teeth fillings so i try not to do it all that much. it used to be twice a week, now down to once a month or so

    Kau Yuk is also high on my winter food list.
    Plenty of good pork belly in the supermarkets at around this time of year but unfortunately, good taro is harder to come by.
