On a beautiful day like today, why are you reading a food blog? Sichuan Liang Mian from Dede’s and Fu An Garden and one other you’re sure to know.

 Honestly……it's such a beautiful day, why would you read our humble little blog? I wouldn't blame you if you didn't….really! Plus, there's a Blood Moon Eclipse tonight.

Ever since Ba Ren closed, I've been looking for a good Sichuan Liang Mian, the wonderful, spicy cold noodle dish, which has become comfort food for me. It's a simple combination of ingredients working in harmony, creating a deceptively complex balance of the "suan (sour) – tian (sweet) – ma (numbing) – la (hot) – xian (salty). I had recently tried the version at Spicy City, which wasn't very good, so I thought I'd check out Dede's, it had been a while, and also Fu An Garden.

09272012 019The noodles were mushy and the sauce watery and insipid. This had too much vinegar and in spite of the looks really lacked the spice…..probably because it was so watered down.

I've got another post on a better meal at Dede's lined up, but this was terrible.

While the flavor was pretty close during my last visit and the noodles terrible, this was an improvement.

09282013 005Looking at this…well, I had my doubts…too pale, too much peanuts, where's the flavor? But I was wrong, all it needed was a good mix. The noodles were vastly improved, though in our opinion, the flavor still falls short….not enough "ma", not enough "suan", not spicy (la) enough……just not enough. Sad really, since the chef here used to be the #2 man at Ba Ren.

Might be nice to grab a couple  hàn bǎo bāo from jìn​chū​……sorry bad translation, perhaps someone can let me know what it should be called in pinyin. Anyway, grab a couple and go watch the "Blood Moon"……. You know, there's a punchline in there somewhere.

Midweek Meanderings: Ready for Cowboy Beer Restaurant (????), Bun Bo Hue (aka Mien Trung) weather, and “Dirty Chip”

 Some odds and ends for "hump day"……

Cowboy Beer Restaurant?:

Driving on Clairemont Mesa Boulevard the other day, I turned on Diane Avenue, much like I did in 2003, and just like then, a sign caught my eye. However, I don't think this will turn out to be much like the restaurant wqe saw that day, which turned out to be Ba Ren. Instead, this place is becoming something called "Cowboy Beer Restaurant", really? Say it isn't so……

Say those three words slowly, cowboy……beer….restaurant and try to make heads or tails of it.

After Ba Ren and before this, the place was a "Hunan" (please take into consideration the quotation marks) restaurant trying to disguise itself as a Sichuan shop.

I actually visited…once. I tried to order some of the dishes on the menu, Steamed Preserved Meat and Suan Do Jiao Chao La, among others….no bueno….you gotta be kidding.

I ended up getting a mediocre rendition of La Rou Chao – the one classic Hunan dish they actually seemed to have.

The preserved (smoked) pork – La Rou (waxy meat) was terrible. It had that slight camphor like flavor and the hard texture of something from a package. The stir fry technique was terrible, some of the vegetables were still raw…..it was also bland….very bland, which Hunan cooking is not!

So now I'm sitting here wondering if a place called Cowboy Beer Restaurant will actually be an improvement……..

Am I the only one glad the weather is kind of cool and gloomy right now?:

Except for the weekend after Thankgsgiving and one wet weekend, we seemed to have totally skipped winter. So I'm kind of glad the weather is cooler, with a chance of rain (which we really need). Much like the seasonal rain totals, my ramen totals are down this season.

I'm going to try to take advangtage of this….we started last night with some Bun Bo Hue.

Porto: Sé do Porto and meeting a “Little Frenchie” (Francesinha) at Cafe Santiago

After lunch at A Grade, the Missus decided that we should take a walk along the Ribeira, the scenic waterfront….though She didn't quite have the usual walk in mind.

I really loved the vibe that Porto gave off……

There was a no nonsense feel to things, a wholesomeness, hard working, honest, "from the gut", in that way, it strangely reminded me of QingDao

Anyway, instead of the usual walk along the waterfront, the Missus decided we should head up to the the Porto Cathedral….but not in the usual manner….nooooo. Instead, we headed to the end of Rua Infante Dom Henrique and through the tunnel…

Here the Missus ordered me up stairs…..after marching up and down the hills of Coimbra, my walking legs had gotten into shape. Still, I had on idea where we were exactly, but we kept heading up those steps, under windows with hanging laundry and some buildings that had been….well…modified to accommodate the bridge.

I'm wondering when this "modification" was done since the bridge opened in 1886……surely when the brisge was perhaps retrofitted?

Eventually….after "heading to the light" we made it top side, and found our way to the Porto Cathedral.

06082013 999Much like the Cathedrals (Sé) in Lisbon and Coimbra, the Cathedral of Porto was an imposing Romanesque structure, almost fortress like in appearance. Like its counterpart in Lisbon, construction of the structure began in the 12th century and features the classic "Rose Window".

As intimidating as this building might be, for some reason I really took to it…perhaps because there was a wedding ceremony taking place at the time of our visit. I really wanted to leave….because who wants their wedding ceremony viewed by a bunch of uninvited tourists?

06082013 1009We quickly made for the ticket station, paid, and headed to the cloister. Like much of Porto, there's so much wonderful Azulejo work. I was told that much of it depicted the "Song of Solomon".

This is worth the price of admission.

In many ways. the medium is binary….blue and white. and yet, the textures, the shading, the expression, never ceases to amaze me.

And then there was the wedding….I'm not sure how I'd feel about having my vows done in front of an audience of perhaps a hundred tourists, but this couple didn't seem to mind.

06082013 1039As we walked away from the Cathedral, I saw São Bento Station and suddenly realized….Porto was now getting a bit smaller for us.

Within the area Northeast of São Bento Station is Rua Catarina, the main shopping area in Porto…pedestrian only streets; with iconic locales like Cafe Majestic.

Fairly close to this area was the shop that João told us would make a good Francesinha, the local specialty sandwich. It seemed to me that Portugal was full of these wonderful "sandes" from the Bifana in Lisbon to the Leitao Sandes it just seemed that there was a knack for pork based sandwiches.

06082013 1048So we ended up at this shop called Cafe Santiago….which looked more like some fast-casual restaurant. The place was empty except for a couple of "old-timers" having espresso in the corner, watching the television.

I'd read a bit about the history of the Francesinha; which is based on the Croque-monsieur. There are three versions at Cafe Santiago; I went with the basic version.

Not much more to say……until you see what this thing looks like.

It almost looks artificial……I was told that many people judge the sandwich on the sauce, which in this case was a light, thin, tomato-beer based, with mild spice. I thought it tasted like tomato soup….the Missus hated it.

06082013 1057Cutting the samdwich in half reveals the true evil that is the Francesinha, in the meat department; salsicha fresca – a hot dog like sausage, linguica, bife – sliced roasted beef, mortadela, and fiambre – ham.Two types of cheese were used , melted inside and melted over the thing.

I kinda liked it in a "calorie-bomb" kind of way. The Missus was totally disgusted, She wouldn't let me have another during out time in Porto…even though I wanted one. I should have ordered the "Francesinha a Santiago", which had fries and was topped with an easy-over egg!

The service was kind of gruff, but the place was clean, and I don't recall ever having a sandwich quite like this….this is definitely not a Croque-monsieur!

Sunday Sandwiches: The playing with my butt edition……

The Missus has been wanting me to make pulled pork since She had the Pulled Pork Hash at Nate's. I'd been wanting to use my meat injector (now that just sounds wrong), so I bought a bone in 7 1/2 pound butt Friday on the way home from work.

IMG_2755So before going to bed I had a chance to….ahem…play with my butt.

I basically used Slap Yo Daddy's Bone In Pork Butt recipe as a guide, making some adjustments for our taste. First thing's first, the injection sauce:

1 Cup Apple Juice
1/2 Cup Turbinado Sugar
3 Tb Kosher Salt
1 Tb Worcestershire Sauce
1 Tb Rib Rub
3 Tb White Vinegar
1 Tb Ghost Pepper Louisiana style Hot Sauce

I decided to name my butt, "Ben Dover"…….

For obvious reasons……

I reserved a half cup of the liquid and injected the rest in a 1 1/2 inch grid pattern over the pork. I then used about 3/4 cup of my rib rub on the butt.

I then tucked Ben in for the night…..

I got up at 5am, got my act together, got the smoker going. At six I put Ben into the smoker.

I kept the pork as cold as possible before smoking, which creates a better smoke ring……..I also kept the fat cap on, laying it fat side down.

After five hours things looked good…..

The butt was hitting about 160. Because the Missus had promised folks at work pulled pork, I needed to finish up fairly quickly, so I went with the Texas Crutch like Slap Yo Daddy recommends. I used a double layer of foil and poured this mixture over the butt – SYD uses butter, I did not, I did add the leftover injection mixture though.

6 ounces beer (in this case Tecate)
1/2 cup leftover injection liquid
1/2 cup tubinado sugar
2 Tb Ghost Pepper Louisiana style Hot Sauce

I left things alone for 2 hours then started checking the temp. After 3 hours it hit 195 and I removed it and let it sit for an hour.

I poured off all the fat and liquid, which had some nice fat since I left the fat cap on the pork. I removed all the liquid and used two forks to pull the pork. I had a taste and basically used the technique from my Oven Kalua Pork recipe to reintroduce some fat/liquid into the pork. I also added about two tablespoons of Maldon Sea Salt; I had cut down on the amount of salt in my rib rub, so this was a necessary step.

03092014 026The flavors were quite nice; it really didn't need any sauce. In the end, The Missus got Her veggies and pulled pork, Her coworkers got their pork, and I got a pretty decent sandwich.

Da' Boyz also made out. Whenever I smoke, i'll do something for them. This time around I saw Beef Knee Bones on sale at Zion Market and bought a bunch. I smoked these up so Frankie has a once a week treat.

I guess everyone wins when I play with my butt???

Midweek Meanderings: Pho Hut opening and some other silliness

Just a couple of quick and rather silly things for hump day.

Actually, when I first saw the sign, I thought it said Pho' What…which might be a great name for some of the pho shops I've eaten at. But no, it's Pho Hut……

This is in the former Quizno's location near the corner of Balboa and Genesee.

Kind of neat in a way as it seems these businesses are now moving further away from Convoy.

I'm still not sold on the name….say "Pho Hut" five times real fast….what does it sound like????

After the inital shock, I just coudn't stop laughing….she actually did her shopping in 99 Ranch Market with the darn thing covering her face….indoors!

Happy Valentine’s Day

Have you noticed the dearth of Valentine's Day posts here? Well, the Missus let me off the hook for this years ago; the practical side of Her just couldn't see going through all the trouble, fighting the crowds, the stress, etc, etc…… But that doesn't mean I've been let of the hook….you see, the Missus also told me, "you know that any day can be Valentine's Day…..everyday, if I declare it so, right?"

 Since things sort of seem random…..here's something that just shows how ancient I am. I recently heard this song for the first time in decades and it took me bac kto my childhood….what we call hanabuddah days. It features the wonderful voice of Liz Damon and a song that was strangely written by Burt Bacharach.

Years ago I met Liz Damon, who had become a Greeter at one of the Casinos in Vegas, she was kind and warm. With a voice like this, I'm sort of surprised she never became a bigger star. I'm sure there's a story here somewhere……. Anyway, I thought it would be appropriate for today.

The strangest Doner Sandwich at Istanbul Kabob/Miramar Pizza

After eating at Motor City Deli, I noticed this place while walking to my car.

I walked up to the window which said "Istanbul Kebob"…..really? There was lamachun and pide on the menu….really? Really? How could I not know about this place?

The location did seem kind of strange, but curiosity had already gotten the better of me, I just had to check this place out. A couple of days later I dropped by.

Entering the well worn interior of the place, I looked up at the menu and didn't see any Turkish dishes at all. Until I looked ot my left and saw this.

Miramar Pizza Istanbul Kebab 04I had more than enough time to check out the menu, because there was no one out at the counter to take my order. The young guys in the back were cracking up and having a good old time it seems.

By the time someone came out to take my order, I had lost my nerve and decided to go the conservative route and ordered the Doner Sandwich ($8.49), something simple that anyplace should be able to make. I also asked the guy if the owners were Turkish and he told me that the former owners were and when the business was sold they were taught all the Turkish dishes and decided to keep it on the menu. Not a very comforting answer, but hey, I've had some good meals under stranger circumstances and in odder places.

So I get my Doner (gyro) sandwich which is wrapped in foil and walk to the table where I unwrapped it and "holy …." (fill in the blanks) "…(more blankety-blank) is this?"

Miramar Pizza Istanbul Kebab 06This wasn't a flat bread wrapped product….it was a burrito…the darn thing was wrapped in a tortilla. Still, my criticism of such an adulteration would be minimized if it was any good….which it was not. Basically, 50% tortilla, 35% dry gyro meat (at least it was heated up), 15% veg, all served with a insipid, runny yogurt sauce…..for real? I know this is SoCal, where, as Kazumi once told me "anything goes with food", but this just wasn't good. I have a special place in my heart for Turkey, especially Istanbul, and this just seemed wrong.

On the bright side….well, the fries were hot and crisp.

And I guess I've finally had a "Turkxican" Burrito(Doner-rito?)….my first, and hopefully last. And yet, in my twisted mind, I can only imagine what the foreboding sounding "Black Sea Pide" is going to be like?

Sunday Sandwiches – The not worth reading edition

So are you actually reading this? Gotcha! Just playing around a bit with negative suggestion…..

Actually, this post is made up some odd and ends with regards to sandwiches, and you should probably come back tomorrow for something a bit better…..really!

Since you decided to stick around….here goes……

IMG_2180Curiosity does get the better of us at times and I'm not an exception.

I was doing my usual toilet paper/paper towel/laundry detergent/ etc, etc, run at Costco on Morena. I passed the "home of the $1.50 hot dog combo" aka the food windows and saw something new on the menu. Something I couldn't help but try.

They often test market items at this location, perhaps because Costco's Regional Headquarters are located here. So this time it was……

My curiosity got the better of me and I ordered one….purely for research purposes of course…..

Damn, this thing was huge….with a good amount of oily barbecue sauce oozing down one side. The beef was shredded like a tough machaca, the sauce was fairly bland with just a mild spicy finish, the roll was hard and cold…..colder than the tasteless coleslaw.

In short, if you're after quantity over quality, this fits the bill.

I had two people email me about the Arby's Smokehouse Brisket…….so I decided to give it a shot. Since a picture is worth a thousand words, try this on for size.

Now let's take a look inside.

I won't go into the too sweet BBQ Sauce, the tough and fatty meat, the cold and greasy onion strings…….all for $5.69? This makes what I recently got from Bristol Farm look like I went to the French Laundry.

And yet, sometimes impulse buys work out well. During my visit to Costco, I decided to pick up one of the prime tri-tips. Seasoning with salt, pepper, granulated garlic, and some Mexican oregano, I kept my expectations low.

My goodness….this was so good.

It was basically a "hot smoke" over oak for about 1 1/2 hours and it came out juicy, tender, with a nice smoke flavor.

Smoked tri-tip 05There ain't no excuse for tough and dry tri-tip. The only problem I see is perfecting how to keep the product thru the course of a day or two.

I also smoked some garlic which I mixed with horseradish, making a sauce for my sandwich.

Recently Consumed: What’s in a name? Pétoncles fumés poêlés, sautes chou vert, pommes darfine – say what?

Huh? Actually, just kind of playing around. This weekend I finally have some time to cook again and the Missus has me doing it with a vengeance. Her favorite dish for the weekend was this:

The fun with the name started when I decided to make Potato pancakes…….pommes darfine, hah! I really wanted a smoked infused scallop, but the problem being also getting a nice carmelization on it as well. So, like I did on a previous occasion with bluefin tuna, I got my stovetop smoker going full tilt and did a very hot smoke for 6 minutes. I then removed it from the smoker. Earlier I had rinsed, dried, and chopped collards (chou vert). Which I ended up chopping a bit thicker than a chiffonade. While the smoker was going I grated garlic and onions, squeezing out a good amount of the moisture. I then julienned the potato, seasoned, mixed together, formed and put aside. I then sauteed the collards, added grated garlic, and a dash of red win vinegar to give it that "pop". Potatoes were done next. While the potatoes were draining, I quickly seared the scallops over super high heat…….

The Missus loved it….though I'm thinking I need some sauce for this the next time….piquillo pepper based perhaps.

Anyway, I thought it would be funny to translate into French……so you could then call me "Fancy Pants prétentieux"
